Fried Plantain Chips with Shrimp Ceviche

WHAT YOU WILL NEED:
One green (non-ripe) plantain
6 large shrimp, rough chop
1/4 cup finely chopped red bell pepper
1 tablespoon of chopped shallot
1 tablespoon of chopped celery
2 limes
SOME HELPFUL TIPS:
1. Zest the 2 limes in a bowl and add juices of the 2 limes
2. Add chopped raw shrimp, red bell pepper, shallot and celery
3. Add red pepper flakes, tamari sauce and fish sauce to the same bowl. Mix well
4. Let the bowl sit for at least 20 minutes so that the shrimp can be cooked by the lime juice
5. Peel and sliced plantain diagonally. Fry them under 350F for 5 minutes and then 375F for another 2 minutes
6. Scoop the ceviche to the fried plantain right before serving. Serve immediately
